Frying

Cut potatoes in the shape of French fries.
Chop onions as chips similar to kanda bhajiya.
Separate mint leaves and stem.
Now fry all the above 3 ingredients.
Fry potatoes similar to french fries.
Onions should be hash brown.
And fry mint for 2-3 minutes.

Main masala:

Take 5-6 spoons of oil in a pan or kadhai heat it.
Add clove, cinnamon and tej pata.
Add chopped onions to it, stir it until the colour turns to hash brown.
Add 2 spoons of ginger-garlic paste, mix it well.
Add a bowl of dahi.
Add a bowl of dahi, 2 tbsp garam masala, dhaniya powder. Salt according to your taste, Lal mirch 1 tbsp or if u want more spicy, mix it well.
Then add fried french fries and peas, and mix it well and keep it aside.

Preparation:

Now, take 2 bowls and add orange and green colour cooking powder respectively. Take just the tip of the teaspoon.
Now take some cashew and raisins in one plate as it will be used for layering.
Put the charcoal on the gas and let it heat.

Final:

Take a big aluminum pan and grease it with ghee.
Keep a plate(which has holes) in the middle of the pan.
Spread the rice and make an even layer.
Now the 2nd layer should be of fried mint and fried onion.
Again rice layer.
Another layer of masala will come. Repeat the whole layer again.
Last and top layer should be rice. Pour colour water and spread it like a spiral
Then spread kevda paani ( it should be almost 1 and half spoon).
Then add fried mint, onions, cashew, raisins on it.
Keep the middle part of the layer empty.
And the wheat dough makes it similar to puri ki size and keeps it in the middle.
Place the hot charcoal on it and add ghee on it. Cover it with a lid immediately and place the pan on a medium flame for 5 minutes.
